FRIAS Holiday Trio
2018 Sauvignon Blanc:
The grapes for the 2018 Sauvignon Blanc were hand selected in the vineyard when they were harvested at full ripeness. They were carefully loaded into a pneumatic press and squeezed in whole clusters, yielding the best juice. The juice went into aged French oak barrels, and the barrels were inoculated with a strain of yeast particularly suited to Sauvignon Blanc. The juice fermented slowly over about 40 days at low temperatures to retain all the fresh fruit and aromatics that come from the grapes, and then sat on the yeast lees while aging 4 months to develop a rich mouthfeel. The wine did not undergo malolactic fermentation and retains the crispness and fresh acidity important to Sauvignon Blanc.
2018 Lady of the Dead:
LADY of the DEAD is a homage to the FRIAS heritage and family. This Cabernet-heavy blend is a serious step up from the debut release in intensity and quality. We start with a bouquet of red fruits, cinnamon and spice. The wine then coats the palate with notes of lush burgundy plums and blackberries. Concluding with balancing sweet tannins, this Lady is ready to be taken seriously.
The juice for this wine came from the red grapes picked throughout the 2019 harvest, from early September. As the red grapes were sorted and filled into tanks, a small percentage of juice was drawn off from each tank to both produce this rosé, and to concentrate the remaining juice for the red wines. Filled directly from tank into well experienced French oak barrels, the juice was inoculated with a variety of yeast strains particularly suited to delicate, aromatic wine such as this. The juice fermented slowly at low temperatures to retain all the fresh fruit and aromatics that come from the grapes to produce a delicate, fruity and enjoyable Rosé.
